Ingredients

  • 8 oz smoked turkey or pork sausage, sliced
  • 1 cup brown lentils, rinsed
  • 1 onion, diced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 4 cups chicken broth
  • 1 tbsp apple cider vinegar
  • 1 tbsp vegetable oil
  • Salt & pepper

Instructions

  2. - Slice smoked sausage; rinse lentils.
  3. - Dice onion, carrots, and potatoes.
  4. - Warm chicken broth; measure thyme and tomato paste.
  5. - Keep vinegar ready for finish.
  6. COOKING STEPS
  7. 1. Heat oil in Dutch oven; brown sausage 3 min.
  8. 2. Add onion and carrots; sauté 3 min. Stir in tomato paste 1 min to darken.
  9. 3. Add lentils, potatoes, thyme, broth; bring to boil. Reduce heat; simmer 35 min until lentils soft.
  10. 4. Season with salt, pepper, and splash apple-cider vinegar for brightness.
