Moroccan Harira with Lamb & Lentils

Traditional hearty soup of lamb, lentils, chickpeas, tomato and warm spices, finished with fresh cilantro and lemon.

Ingredients

  • 8 oz lamb stew meat
  • 1 tbsp olive oil
  • 1 onion, 2 celery stalks, 1 carrot
  • 2 cloves garlic, 1 tsp ginger paste
  • 1 tsp cinnamon, 1 tsp cumin, 1/2 tsp turmeric
  • 1/2 cup lentils, 1 cup chickpeas
  • 14 oz diced tomatoes, 4 cups broth
  • 1/4 cup cilantro, lemon wedges

Instructions

  1. PREP AHEAD
  2. - Dice lamb into bite-size; rinse lentils and chickpeas.
  3. - Chop onion, celery, carrot; mince garlic; grate ginger.
  4. - Measure spices: cinnamon, cumin, turmeric; open diced tomatoes; warm broth.
  5. COOKING STEPS
  6. 1. Heat olive oil in soup pot over medium; brown lamb 3 min.
  7. 2. Add onion, celery, carrot; sauté 5 min until softened.
  8. 3. Stir in garlic, ginger, cinnamon, cumin, turmeric; cook 1 min aromatic.
  9. 4. Add lentils, chickpeas, diced tomatoes, and broth; bring to boil.
  10. 5. Reduce heat; cover and simmer 40 min until lamb and lentils are tender.
  11. 6. Season with salt and pepper; stir chopped cilantro. Serve steaming harira with lemon wedges.
