Ingredients
- Veg mix (lettuce, tomatoes, cucumbers, radishes)
- 2 pita breads
- 1 cup cooked lentils
- 6 oz halloumi
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp sumac
- 1 clove garlic
- Mint, salt & pepper
Instructions
- PREP AHEAD
- - Cube 2 pitas; toss with 1 Tbsp oil & 1 tsp sumac.
- - Slice halloumi ½-in; oil lightly.
- - Chop lettuce, tomatoes, cucumbers, radishes; rinse 1 c cooked lentils.
- - Whisk dressing: 2 Tbsp olive oil, 2 Tbsp lemon juice, 1 minced garlic, ½ tsp sumac, salt, pepper, chopped mint.
- COOKING STEPS
- 1. Bake pita cubes at 350 °F 10 min until crisp; cool.
- 2. Heat grill pan to medium-high; sear halloumi 1–2 min per side until golden stripes form.
- 3. In large bowl toss vegetables and lentils with dressing. Fold in crunchy pita.
- 4. Plate salad; crown with warm grilled halloumi slices; dust extra sumac. Serve immediately.
