Ingredients

  • Veg mix (lettuce, tomatoes, cucumbers, radishes)
  • 2 pita breads
  • 1 cup cooked lentils
  • 6 oz halloumi
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp sumac
  • 1 clove garlic
  • Mint, salt & pepper

Instructions

  1. PREP AHEAD
  2. - Cube 2 pitas; toss with 1 Tbsp oil & 1 tsp sumac.
  3. - Slice halloumi ½-in; oil lightly.
  4. - Chop lettuce, tomatoes, cucumbers, radishes; rinse 1 c cooked lentils.
  5. - Whisk dressing: 2 Tbsp olive oil, 2 Tbsp lemon juice, 1 minced garlic, ½ tsp sumac, salt, pepper, chopped mint.
  6. COOKING STEPS
  7. 1. Bake pita cubes at 350 °F 10 min until crisp; cool.
  8. 2. Heat grill pan to medium-high; sear halloumi 1–2 min per side until golden stripes form.
  9. 3. In large bowl toss vegetables and lentils with dressing. Fold in crunchy pita.
  10. 4. Plate salad; crown with warm grilled halloumi slices; dust extra sumac. Serve immediately.
