Ingredients
- 8 oz seitan (strips)
- 4 pita breads
- 1 cup Greek yogurt
- 1/2 cucumber (grated & drained)
- 2 cloves garlic (minced)
- 2 tbsp dill or mint (chopped)
- 2 tbsp lemon juice, divided
- 4 tbsp olive oil, divided
- 2 tsp oregano, divided
- 2 tomatoes (chopped)
- 1 cucumber (chopped)
- 1/4 red onion (sliced)
- 1/2 cup kalamata olives
- 3 oz feta (cubed)
- 2 tbsp red‑wine vinegar
- Salt & pepper

- PREP AHEAD
- - Slice seitan into thin strips; toss oregano, garlic powder, oil.
- - Shred cucumber; squeeze dry; mix yogurt, garlic, dill, lemon for tzatziki; chill.
- - Chop tomato, cucumber, olives, feta for salad; dress with olive oil & oregano.
- - Warm pita on griddle.
- COOKING STEPS
