Ingredients

  • 8 oz seitan (strips)
  • 4 pita breads
  • 1 cup Greek yogurt
  • 1/2 cucumber (grated & drained)
  • 2 cloves garlic (minced)
  • 2 tbsp dill or mint (chopped)
  • 2 tbsp lemon juice, divided
  • 4 tbsp olive oil, divided
  • 2 tsp oregano, divided
  • 2 tomatoes (chopped)
  • 1 cucumber (chopped)
  • 1/4 red onion (sliced)
  • 1/2 cup kalamata olives
  • 3 oz feta (cubed)
  • 2 tbsp red‑wine vinegar
  • Salt & pepper

Instructions

  1. PREP AHEAD
  2. - Slice seitan into thin strips; toss oregano, garlic powder, oil.
  3. - Shred cucumber; squeeze dry; mix yogurt, garlic, dill, lemon for tzatziki; chill.
  4. - Chop tomato, cucumber, olives, feta for salad; dress with olive oil & oregano.
  5. - Warm pita on griddle.
  6. COOKING STEPS
  7. 1. Sear seasoned seitan in hot skillet 5 min until edges crisp.
  8. 2. Spread tzatziki on warm pita, pile seitan, add tomato-cucumber salad; fold like gyro.
