Ingredients

  • Bone‑in chicken, onions, garlic, tomato, spices (cumin, coriander, turmeric, cardamom, cinnamon, cloves), basmati rice, raisins.

Instructions

  1. PREP AHEAD
  2. - Pat bone-in chicken dry; rub with kabsa spice mix, salt.
  3. - Slice 2 onions; mince 4 garlic cloves.
  4. - Rinse 2 c basmati; soak 10 min.
  5. - Measure tomato paste, diced tomato, whole spices (cardamom, cinnamon, cloves, bay).
  6. - Plump ¼ c raisins in warm water.
  7. COOKING STEPS
  8. 1. Heat 2 Tbsp ghee in Dutch oven; brown chicken 3 min per side; set aside.
  9. 2. In same pot sauté onion 5 min; add garlic and tomato paste 1 min.
  10. 3. Add diced tomato, whole spices, and 3 c stock; return chicken; cover, simmer 20 min.
  11. 4. Lift chicken; stir drained rice and raisins into broth; nestle chicken on top. Cover; cook low 15 min until rice tender.
  12. 5. Rest pot 5 min; fluff rice around chicken. Garnish toasted almonds. Serve family-style.
