Ingredients

  • Chickpeas, paneer, onion, garlic, ginger, tomatoes, cream, spice mix, basmati rice.

Instructions

  1. PREP AHEAD
  2. - Rinse canned chickpeas; cube paneer.
  3. - Dice onion; mince garlic, ginger; open crushed tomatoes.
  4. - Toast spices: cumin, coriander, chili, garam masala.
  5. - Start basmati rice.
  6. COOKING STEPS
  7. 1. Fry paneer cubes in 1 Tbsp oil until golden; reserve.
  8. 2. In same pan sauté onion 5 min; add garlic & ginger 1 min.
  9. 3. Stir toasted spices 30 sec; add tomatoes; simmer 5 min.
  10. 4. Add chickpeas and ½ c water; simmer 10 min. Return paneer; cook 2 min more.
  11. 5. Finish with 1 Tbsp butter and chopped cilantro. Serve with rice.
