- Chickpeas, paneer, onion, garlic, ginger, tomatoes, cream, spice mix, basmati rice.
Instructions
- PREP AHEAD
- - Rinse canned chickpeas; cube paneer.
- - Dice onion; mince garlic, ginger; open crushed tomatoes.
- - Toast spices: cumin, coriander, chili, garam masala.
- - Start basmati rice.
- COOKING STEPS
- 1. Fry paneer cubes in 1 Tbsp oil until golden; reserve.
- 2. In same pan sauté onion 5 min; add garlic & ginger 1 min.
- 3. Stir toasted spices 30 sec; add tomatoes; simmer 5 min.
- 4. Add chickpeas and ½ c water; simmer 10 min. Return paneer; cook 2 min more.
- 5. Finish with 1 Tbsp butter and chopped cilantro. Serve with rice.
