- - Blanch spinach 30 sec; plunge ice bath; drain & blend to smooth puree.
- - Cube paneer; pan-fry until golden.
- - Rinse rice; begin cooking.
- - Chop onion; mince garlic, ginger; measure spices.
- COOKING STEPS
- 1. Heat 1 Tbsp ghee; sauté onion 5 min golden.
- 2. Add garlic, ginger, cumin, coriander, turmeric; stir 1 min.
- 3. Pour in spinach puree + splash water; simmer 5 min; stir occasionally.
- 4. Add fried paneer; simmer 2 min more. Finish with 2 Tbsp cream and pinch garam masala.
